As of late, kombucha has become one of the most popular health drinks of the decade.  However, the fermented drink dates back to 221 B.C. in China during the Tsin Dynasty. In fact, the Chinese called it the “elixir of immortality”.  As well, the name developed in Japan in 415 AD by a Korean physician called Kombu or Kambu.  The renowned physician treated Emperor Inyko with the tea; “Kombu” + cha, which means tea.

This life giving beverage is a fermented tea that contains the simplest ingredients – tea, sugar and SCOBY (a symbiotic colony of yeast and bacteria). SCOBY is also known as the “mother” or “mushroom”. However, it is not a fungus or mushroom or fungus.  Actually, SCOBY is a distinct group of microorganisms that work together to ferment sweetened green or black tea to make kombucha. The process itself is similar to pickling cucumbers or brewing beer.

Once the fermentation process is complete you create a tangy beverage or brew similar to champagne or apple cider.  However, kombucha also contains many probiotics, enzymes and vitamins. In fact, many call the brew the “elixir of life”.
